Why is this honey dark and strong?+
Bees at the forest line forage wild pine, herbs and wildflowers rather than a single crop. That mix gives a darker colour, more minerals and a much deeper flavour than plantation honey.
It has set solid — is that a problem?+
No — crystallisation is the surest home sign of raw honey. Stand the jar in warm water for a few minutes and it returns to liquid without losing character.
